Breakfast Frittata

The perfect late Sunday morning breakfast served with top quality coffee and buttery toast!

Ingredients

  • 1 tbsp oil
  • 1 tbsp butter
  • 4 bacon rashers (diced)
  • 2 jumbo sausages
  • 1/2 onion (diced)
  • 5 eggs
  • 1 tbsp milk
  • 5 hash browns
  • 1 tbsp garlic granules
  • 50g Cahills Chives Cheese (grated)
  • Salt & Pepper

Method

  1. Pre-heat oven to 180 degrees
  2. In a oven proof pan, heat oil and fry bacon and sausages
  3. When cooked remove from the pan and set aside
  4. In a bowl, break up the hash browns, add onion, 1/2 tbsp of garlic granules and season with salt & pepper
  5. Add 1 tbsp butter to pan and cover base with hash brown mix
  6. Leave undisturbed over medium heat for approx 5 mins
  7. Stir and combine to cook for a further 2-3 mins
  8. Sprinkle over the grated chives cheese
  9. Scramble the 5 eggs, add milk, 1/2 tbsp garlic granules and salt & pepper in a bowl
  10. Pour the egg mix over the hash brown mixture
  11. Return the egg and bacon to the top of the dish and place in the oven for 10-15 mins until fully cooked through
  12. Scatter spring onion over the dish before serving
  13. Serve with coffee or orange juice with a side of buttery toast
  14. Enjoy!
