Chilli Beef Nachos

This dish is the perfect serving when a group of friends call over to your house. The dish can easily serve five or six people. It is very easy to make and is ready very quickly. Everyone looks beef nachos and we think everyone will love this recipe!

Ingredients

  • 1 tbsp rapeseed oil
  • 1 onion diced
  • 500g lean minced beef
  • 1 tin chopped tomatoes
  • 3 cloves garlic
  • 1 red pepper (diced)
  • 1 tbsp dark brown sugar
  • 1 tbsp paprika
  • 1 tbsp hot chilli powder
  • 1 tbsp cumin
  • 1 tbsp ground coriander
  • Pinch of salt & pepper
  • 500ml beef stock
  • 1 share bag of tortilla chips
  • 60g Cahill’s Spring Onion Cheese
  • Sliced red chilli, sliced spring onion & guacamole to serve

Method

  1. Heat rapeseed oil in a large pan over medium heat
  2. Add the chopped onions and fry, allowing to caramelise slightly for 15 mins (stir occasionally)
  3. Add the minced beef and cook through, breaking up any lumps
  4. Add tomatoes, beef stock, garlic, red pepper, sugar and spices
  5. Season with salt and pepper
  6. Bring to the boil then reduce heat and simmer, uncovered, for approx. 1 hour
  7. Pre-heat your oven to 180 degrees
  8. Line your ovenproof dish with tortilla chips
  9. Layer on the mince & then sprinkle (Cahill’s Spring Onion Cheese) over the top
  10. Pop in the oven for 10 minutes
  11. Remove from the oven. Serve with a few dollops of guacamole on top and scatter chopped chilli & spring onion around the dish
  12. Serve and Enjoy!
