The perfect late Sunday morning breakfast served with top quality coffee and buttery toast!
Ingredients
- 1 tbsp oil
- 1 tbsp butter
- 4 bacon rashers (diced)
- 2 jumbo sausages
- 1/2 onion (diced)
- 5 eggs
- 1 tbsp milk
- 5 hash browns
- 1 tbsp garlic granules
- 50g Cahills Chives Cheese (grated)
- Salt & Pepper
Method
- Pre-heat oven to 180 degrees
- In a oven proof pan, heat oil and fry bacon and sausages
- When cooked remove from the pan and set aside
- In a bowl, break up the hash browns, add onion, 1/2 tbsp of garlic granules and season with salt & pepper
- Add 1 tbsp butter to pan and cover base with hash brown mix
- Leave undisturbed over medium heat for approx 5 mins
- Stir and combine to cook for a further 2-3 mins
- Sprinkle over the grated chives cheese
- Scramble the 5 eggs, add milk, 1/2 tbsp garlic granules and salt & pepper in a bowl
- Pour the egg mix over the hash brown mixture
- Return the egg and bacon to the top of the dish and place in the oven for 10-15 mins until fully cooked through
- Scatter spring onion over the dish before serving
- Serve with coffee or orange juice with a side of buttery toast
